Peach Layer

  • 2 cups sliced peaches (fresh or canned, well-drained)
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

Pound Cake Batter

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs (room temperature)
  • 3 cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 cup sour cream (or whole milk)
  • 1 tbsp vanilla extract

Optional Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk or peach juice
  • ½ tsp vanilla

👩‍🍳 Instructions

  1. Prep the Peaches
    In a bowl, toss peaches with brown sugar, cinnamon, nutmeg, cornstarch, and vanilla. Set aside.
  2. Make the Batter
    Cream butter and sugar until light and fluffy (3–4 minutes).
    Add eggs one at a time, beating well after each.
    Mix in vanilla.
  3. Dry Ingredients
    In a separate bowl, whisk flour, salt, and baking powder.
  4. Combine
    Add dry ingredients to the batter alternately with sour cream, beginning and ending with flour. Mix just until combined.
  5. Assemble
    Grease and flour a bundt or loaf pan.
    Pour half the batter into the pan, spoon half the peaches over it.
    Repeat with remaining batter and peaches. Swirl gently with a knife.
  6. Bake
    Bake at 325°F (165°C) for 75–85 minutes, or until a toothpick comes out clean.
    Cool 15 minutes, then invert.
  7. Glaze (Optional but AMAZING)
    Whisk glaze ingredients and drizzle over cooled cake.
