Ingredients

  • 250 g (½ lb) shrimp, peeled & deveined
  • 250 g (½ lb) crab meat
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 3 cups seafood stock (or chicken stock)
  • 1 cup heavy cream
  • ½ cup milk
  • 1 tbsp tomato paste
  • ½ tsp paprika
  • ¼ tsp cayenne pepper (optional)
  • Salt & black pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Cook shrimp
    • Heat olive oil in a pot, add shrimp, cook 1–2 minutes per side.
    • Remove and chop roughly. Set aside.
  2. Make the base
    • In the same pot, melt butter.
    • Add onion and cook until soft.
    • Add garlic and cook 30 seconds.
  3. Thicken
    • Stir in flour and cook 1 minute (don’t brown).
    • Slowly whisk in seafood stock.
  4. Build flavor
    • Add tomato paste, paprika, cayenne, salt, and pepper.
    • Simmer 10 minutes.
  5. Make it creamy
    • Add cream and milk, stir gently.
    • Add shrimp and crab meat.
  6. Finish
    • Simmer 5 more minutes (do not boil).
    • Adjust seasoning.
