🥒🍤 CREAMY CUCUMBER SHRIMP SALAD
Ingredients
- 1 lb shrimp, peeled, deveined, and cooked
- 2 large cucumbers, thinly sliced
- ½ small red onion, thinly sliced
- ½ cup mayonnaise
- ¼ cup sour cream or Greek yogurt
- 1 tbsp lemon juice (or vinegar)
- 1 tsp Dijon mustard (optional)
- 1 clove garlic, minced
- Salt & black pepper, to taste
- Fresh dill or parsley, chopped
Instructions
- If shrimp are raw, cook in boiling salted water for 2–3 minutes until pink. Drain and cool.
- In a bowl, whisk mayonnaise, sour cream (or yogurt), lemon juice, mustard, garlic, salt, and pepper.
- Add cucumbers, red onion, and shrimp.
- Gently toss to coat everything evenly.
- Chill for 20–30 minutes before serving.
- Garnish with fresh dill or parsley.
Tips
- Use English cucumbers for less water
- Add a pinch of Old Bay or paprika for extra flavor
