Seafood Bisque with Crab, Shrimp & Lobster

Ingredients

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 3 cups seafood stock (or chicken stock)
  • 1 cup heavy cream
  • ½ cup white wine (optional)
  • ½ cup tomato paste
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste
  • ½ lb cooked shrimp, chopped
  • ½ lb cooked crab meat
  • ½ lb cooked lobster meat, chopped
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a pot. Add onion and cook until soft.
  2. Stir in garlic and cook 1 minute.
  3. Add flour and whisk to form a roux.
  4. Slowly pour in seafood stock while whisking.
  5. Add tomato paste, wine (if using), Old Bay, salt, and pepper.
  6. Simmer 10 minutes.
  7. Stir in heavy cream and simmer 5 minutes.
  8. Add shrimp, crab, and lobster. Cook on low for 5 minutes.
  9. Add lemon juice and stir.
  10. Serve hot with parsley on top.
