  1. Prepare the onion:
    • Peel the onion and cut off about ½ inch from the top.
    • Place the onion cut-side down. Starting ½ inch from the root, make 12–16 cuts downward all around.
    • Flip the onion over and gently separate the petals.
  2. Make the coating:
    • In one bowl, whisk flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
    • In another bowl, whisk buttermilk and eggs together.
  3. Coat the onion:
    • Dip the onion into the flour mixture, making sure it gets between the petals.
    • Then dip it into the buttermilk mixture.
    • Finally, dredge again in the flour mixture for an extra-crispy coating.
  4. Fry the onion:
    • Heat oil in a deep fryer or large pot to 375°F (190°C).
    • Carefully lower the onion into the hot oil, cut side down. Fry for about 6–8 minutes, then flip and fry for another 6–8 minutes, until golden brown.
    • Drain on paper towels.
  5. Make the sauce:
    • Mix together all sauce ingredients in a small bowl. Chill until ready to serve.
  6. Serve:
    • Place the Bloomin’ Onion on a plate, petals spread out, and serve with dipping sauce in the center.
