
🧁 Quick & Easy Muffins (Perfectly Cracked Tops)
Ingredients:
- 2 eggs
- 1 cup sugar
- 1 cup milk
- 1 cup vegetable oil
- 2½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 375°F (190°C). Line a muffin tin or grease it well.
- Whisk eggs & sugar until light and slightly fluffy.
- Add liquids: mix in milk, oil, and vanilla until smooth.
- Combine dry ingredients: flour, baking powder, and salt.
- Mix gently: add dry ingredients to wet ingredients just until combined (do not overmix).
- Fill cups about ¾ full.
- Bake for 18–22 minutes, until risen and cracked on top and a toothpick comes out clean.
- Cool 5 minutes, then remove and enjoy.
Tips for Perfect Cracks:
- Start with a hot oven (375°F)
- Don’t overmix the batter
- Fill cups ¾ full for a nice dome
