Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1 cup milk
  • 1 cup vegetable oil
  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin or grease it well.
  2. Whisk eggs & sugar until light and slightly fluffy.
  3. Add liquids: mix in milk, oil, and vanilla until smooth.
  4. Combine dry ingredients: flour, baking powder, and salt.
  5. Mix gently: add dry ingredients to wet ingredients just until combined (do not overmix).
  6. Fill cups about ¾ full.
  7. Bake for 18–22 minutes, until risen and cracked on top and a toothpick comes out clean.
  8. Cool 5 minutes, then remove and enjoy.
