
🥣 Instructions
1. Preheat
Preheat oven to 180°C / 350°F. Line muffin cups.
2. Make batter
In a bowl, whisk:
- Egg + sugar + vanilla
Then add: - Milk + melted butter
Stir well.
Add:
- Flour + baking powder + salt
Mix just until combined (don’t overmix).
Fold in add-ins if using.
3. Fill cups
Divide batter into muffin cups (¾ full).
4. Bake
Bake 12–15 minutes until:
- Golden on top
- Toothpick comes out clean
🍫 Variations
Chocolate muffins: add 2 tbsp cocoa powder
Lemon muffins: add 1 tbsp lemon zest
Cinnamon muffins: add 1 tsp cinnamon
Blueberry muffins: fold in 1/2 cup berries
💡 Tips
- Don’t overmix = fluffier muffins
- Add a little sugar on top before baking for a crunchy lid
- Fill cups evenly for perfect rise
🧁 Super Quick Microwave Version (2 min)
Mix:
- 4 tbsp flour
- 2 tbsp sugar
- 1/2 tsp baking powder
- 3 tbsp milk
- 1 tbsp oil
- 1/4 tsp vanilla
Microwave 1–1:30 minutes
Eat immediately!
