- Arrange cut side down on baking sheet.
- Roast for 35β40 minutes, until golden and crisp.
- Sprinkle with parsley and serve with dipping sauce or sour cream.

π§ Ingredients:
- 1Β½ lbs small baby potatoes
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt & pepper
- Fresh thyme or rosemary (optional)
- Extra butter or cheese for topping (optional but YES)

- Boil potatoes in salted water until fork-tender (about 15β20 minutes). Drain.
- Preheat oven to 425Β°F (220Β°C).
- Line a baking sheet. Place potatoes on it and gently smash with a glass or potato masher.
- Mix melted butter, olive oil, and garlic. Spoon over each potato.
- Sprinkle salt, pepper, and herbs.
- Bake for 20β25 minutes until crispy and golden.
- Optional: sprinkle shredded cheese in the last 5 mins. π
