
Instructions:
- Preheat Oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Sauté Sausage: In a skillet over medium heat, lightly brown the sausage slices. Set aside.
- Make the Cheese Sauce:
- In a medium saucepan, melt butter.
- Add chopped onion and sauté until translucent (about 3–4 minutes).
- Stir in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk and stir until it thickens (3–5 minutes).
- Stir in garlic powder, paprika, salt, and pepper.
- Add cheddar and mozzarella cheese, stirring until melted.
- Remove from heat and mix in sour cream.
- Assemble Casserole:
- Layer half of the sliced potatoes in the baking dish.
- Top with half the sausage and half the cheese sauce.
- Repeat the layers.
- Bake uncovered for 50–60 minutes, or until potatoes are fork-tender and top is bubbly and golden.
- Garnish with chopped parsley or chives before serving.
