1. Preheat Oven:

  • Set to 375°F (190°C).

2. Prepare Chicken:

  • Season chicken with salt, pepper, paprika, and garlic powder.

3. Brown the Chicken:

  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken thighs, skin-side down first, for 3–4 minutes per side until golden. Remove and set aside.

4. Make the Sauce:

  • In the same skillet, cook chopped bacon until crispy.
  • Remove excess fat, leaving about 1 tbsp in the pan.
  • Add butter, then garlic, and sauté for 30 seconds.

5. Deglaze & Cream:

  • Pour in chicken broth, heavy cream, and mustard.
  • Bring to a gentle simmer. (Add cornstarch slurry now if you want it thicker.)

6. Assemble:

  • Return chicken to the pan. Spoon some sauce over each piece.
  • Sprinkle the top generously with cheese and crispy bacon bits.

7. Bake:

  • Transfer to oven and bake for 25–30 minutes, or until chicken is cooked through and cheese is bubbly and golden.

8. Garnish & Serve:

  • Sprinkle with parsley or chives and serve over mashed potatoes, rice, or with crusty bread!
