Instructions:

  1. Prepare the cabbage: Shred the cabbage finely. Sprinkle with a little salt, toss, and let sit for 15 minutes. Squeeze out excess liquid.
  2. Cook the cabbage: Heat the oil in a large skillet or pot. Add the sugar and let it caramelize lightly. Add the cabbage (and onion if using). Cook slowly over medium heat, stirring often, until the cabbage turns golden brown and soft (about 25–30 minutes). Season generously with black pepper.
  3. Cook the noodles: Meanwhile, cook noodles in salted boiling water until tender. Drain well.
  4. Combine: Add the drained noodles to the cabbage, toss until evenly coated, and adjust seasoning with more salt and pepper if needed.
  5. Serve: Traditionally served as a main dish with pickles or as a side dish.
