
🔪 Instructions:
1. Prep the Beef:
- Pat the beef tenderloin dry with paper towels.
- Season generously with salt and pepper on all sides.
- Let it sit at room temperature for about 30 minutes before cooking (helps it cook evenly).
2. Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Place a rack in a roasting pan or use a wire rack over a baking sheet.
3. Sear the Tenderloin:
- In a large skillet, heat olive oil over medium-high heat.
- Sear the beef on all sides (about 2–3 minutes per side) until browned.
- Transfer to the prepared rack.
4. Make the Herb Butter:
- In a small bowl, mix together the softened butter, minced garlic, horseradish or mustard, and minced herbs.
5. Coat the Beef:
- Spread the herb butter mixture evenly over the seared beef tenderloin.
6. Roast:
- Roast in the preheated oven for 25–35 minutes, or until the internal temperature reaches:
- 120–125°F (49–52°C) for rare
- 130–135°F (54–57°C) for medium-rare
- 140–145°F (60–63°C) for medium
Use a meat thermometer for best results!
7. Rest Before Slicing:
- Remove from oven and tent loosely with foil.
- Let rest for 10–15 minutes before slicing to allow juices to redistribute.
