    • Pat cube steaks dry with paper towels.
    • Mix flour, salt, pepper, paprika, and garlic powder in a shallow dish.
    • In another dish, whisk eggs and buttermilk together.
  2. Dredge & Coat
    • Dip each steak into the flour, then egg mixture, then back into the flour (double coating makes it extra crispy).
  3. Fry the Steaks 🍳
    • Heat about ½ inch of oil in a large skillet to 350°F (175°C).
    • Fry steaks 3–4 minutes per side until golden brown and cooked through.
    • Remove and keep warm on a wire rack or paper towels.
  4. Make the Cream Gravy 🥛
    • Pour off most of the oil, leaving about ¼ cup with browned bits in the skillet.
    • Whisk in flour, cooking for 1–2 minutes until lightly golden.
    • Slowly whisk in milk until smooth and thickened (about 5 minutes).
    • Season generously with salt and plenty of black pepper.
