
Instructions:
- Toss sliced apples with lemon juice, sugar, cinnamon, and cornstarch.
- Set aside and allow the apples to release some juice.
🧈 Shortcrust Pastry (Base + Top):
Ingredients:
- 300g all-purpose flour
- 100g powdered sugar
- 200g cold butter (cubed)
- 1 egg
- Pinch of salt
- Optional: 1 tsp vanilla extract or grated lemon zest
Instructions:
- In a bowl, combine flour, sugar, and salt.
- Add butter and rub into the flour until crumbly.
- Add egg (and vanilla or zest if using) and knead briefly into a dough.
- Divide into two portions: one slightly larger for the base.
- Wrap both in plastic wrap and chill for 30–60 mins.
🧑🍳 Assemble the Pie:
- Preheat oven to 180°C (350°F).
- Roll out the larger dough piece and line a greased pie tin (about 24cm/9″).
- Prick the base with a fork. Prebake for 10 minutes.
- Spread the cooled vanilla cream on the base.
- Layer the apple mixture evenly over the cream.
- Roll out the remaining dough and cut into strips or cover fully as a top crust.
- Brush with beaten egg or milk.
🔥 Bake:
- Bake at 180°C (350°F) for 40–45 minutes, or until golden brown and bubbly.
❄️ Cool & Serve:
- Let cool completely so the cream sets.
- Optional: Dust with powdered sugar or serve with whipped cream or vanilla ice cream!
