1. Make the batter
- In a bowl, whisk eggs, milk, and sparkling water.
- Add flour, sugar, salt, and vanilla.
- Mix until smooth (thin, runny batter).
- Let it rest for 10–15 minutes.
2. Cook the pancakes
- Heat a non-stick pan and lightly grease it.
- Pour a small amount of batter and swirl to make a thin layer.
- Cook for about 1 minute, then flip and cook the other side.
- Repeat with remaining batter.
3. Fill and roll
- Spread your chosen filling over each pancake.
- Roll or fold them.
🍽️ Serving
- Sprinkle with powdered sugar
- Add a drizzle of chocolate or extra jam
- Serve warm 😋
