🥔 Potatoes with Eggs (Crispy & Creamy)


👩‍🍳 Instructions:

  1. Cook the Potatoes
    In a skillet, heat oil or butter over medium heat. Add diced potatoes and cook, stirring occasionally, for about 10–12 minutes, until golden and tender. Season with salt and pepper.
  2. Add Onion (Optional)
    Add chopped onion and cook for another 3–4 minutes until softened.
  3. Add the Eggs
    Crack eggs directly into the pan over the potatoes. Stir gently to scramble or leave whole if you prefer sunny-side-up style.
  4. Cook Until Set
    Cover with a lid and cook for 2–3 minutes, or until eggs are cooked to your desired doneness.
  5. Finish & Serve
    Top with fresh herbs, cheese, or a dash of paprika. Serve warm with crusty bread or salad.
