- Cook the Potatoes

Add chopped onion and cook for another 3–4 minutes until softened. - Add the Eggs
Crack eggs directly into the pan over the potatoes. Stir gently to scramble or leave whole if you prefer sunny-side-up style. - Cook Until Set
Cover with a lid and cook for 2–3 minutes, or until eggs are cooked to your desired doneness. - Finish & Serve
Top with fresh herbs, cheese, or a dash of paprika. Serve warm with crusty bread or salad.
