Instructions
- Prepare the Potato Base:
- Grate potatoes and squeeze out excess water.
- Mix with eggs, flour, cheese, paprika, salt, and pepper.
- Spread evenly onto a parchment-lined baking sheet (rectangular shape, about 1 cm thick).
- Drizzle lightly with oil or melted butter.
- Bake at 200°C / 390°F for 25–30 minutes, until golden and set.
- Prepare the Filling:
- Heat oil in a skillet, sauté onion, garlic, and pepper until soft.
- Add ham/sausage/meat and cook for a few minutes.
- Stir in spinach until just wilted, season well.
- Assemble & Roll:
- Remove baked potato base from oven and let cool slightly (so it doesn’t tear).
- Spread filling evenly, sprinkle with cheese.
- Using the parchment paper to help, gently roll it up into a tight roulade.
- Top & Bake Again:
- Sprinkle the top with more cheese and chopped herbs.
- Return to the oven for 10–15 minutes until the cheese on top is melted and slightly browned.
- Serve:
- Let it rest for 5–10 minutes before slicing.
- Perfect as a main dish with a side salad or as a party appetizer.
Would you like me to give you a vegetarian version (with mushrooms, spinach, and feta) — or keep it classic with smoked sausage and paprika for a real Hungarian flavor?
