- Preheat oven to 400°F (200°C). Grease a muffin tin with cooking spray or brush lightly with oil.
- Mix ingredients: In a large bowl, combine the hash browns, cheddar cheese, Parmesan (if using), eggs, green onions, bell pepper, salt, and pepper. Mix until evenly combined.
- Spoon mixture into muffin cups, filling each about ¾ full. Press down lightly with a spoon to pack.
- Bake for 25–30 minutes, or until golden brown and crispy on the edges.
- Cool & serve: Let cool for a few minutes before removing from the tin. Serve with sour cream, ranch, or spicy mayo for dipping.
