Step 1: Make the Cake

  1. Preheat oven to 175°C / 350°F. Line and grease a round cake pan.
  2. Beat egg whites with a pinch of salt until stiff peaks form.
  3. In a separate bowl, beat egg yolks with sugar and vanilla until pale and creamy.
  4. Gently fold in ground walnuts and lemon zest (if using).
  5. Carefully fold in the beaten egg whites, one-third at a time, until fully combined.
  6. Pour into pan and bake for 30–35 minutes, or until a toothpick comes out clean.
  7. Cool completely before slicing.

Step 2: Prepare the Frosting

  1. Beat butter and powdered sugar until light and fluffy.
  2. Add in ground walnuts, vanilla, and milk (or coffee) until spreadable.
  3. Optional: Add cocoa for a chocolate walnut twist.

Step 3: Assemble

  1. Slice cake into 2 or 3 layers (optional).
  2. Spread frosting between layers and all over the cake.
  3. Decorate with walnut halves or a dusting of powdered sugar.
