✅ Step 1: Make the Cake
- Preheat oven to 175°C / 350°F. Line and grease a round cake pan.
- Beat egg whites with a pinch of salt until stiff peaks form.
- In a separate bowl, beat egg yolks with sugar and vanilla until pale and creamy.
- Gently fold in ground walnuts and lemon zest (if using).
- Carefully fold in the beaten egg whites, one-third at a time, until fully combined.
- Pour into pan and bake for 30–35 minutes, or until a toothpick comes out clean.
- Cool completely before slicing.
✅ Step 2: Prepare the Frosting
- Beat butter and powdered sugar until light and fluffy.
- Add in ground walnuts, vanilla, and milk (or coffee) until spreadable.
- Optional: Add cocoa for a chocolate walnut twist.
✅ Step 3: Assemble
- Slice cake into 2 or 3 layers (optional).
- Spread frosting between layers and all over the cake.
- Decorate with walnut halves or a dusting of powdered sugar.
