
🔪 Instructions:
1. Make the Meatloaf:
- Preheat oven to 375°F (190°C).
- In a bowl, combine milk and breadcrumbs; let sit 5 minutes.
- Add ground meat, onion, garlic, eggs, Worcestershire, mustard, herbs, salt, and pepper.
- Mix gently until just combined (don’t overwork the meat).
- Shape into a loaf on a baking sheet or use a loaf pan.
- Bake for 45–55 minutes, or until the internal temp is 160°F (71°C).
- Let rest 10 minutes before slicing.
2. Make the Caramelized Onion Gravy:
- In a skillet, melt butter with olive oil over medium heat.
- Add sliced onions and cook low and slow for 20–30 minutes, stirring occasionally, until golden brown and soft.
- Sprinkle flour over the onions and stir for 1 minute to cook it out.
- Gradually add beef broth, stirring constantly.
- Add Worcestershire and let simmer until thickened (about 5–8 minutes).
- Season with salt and pepper, and a splash of cream if desired.
🍽️ Serve:
Slice meatloaf and spoon that rich onion gravy generously over the top. Serve with creamy mashed potatoes, roasted carrots, or green beans for a full comfort-food feast.
