🍲 Semolina Dumpling Soup

Ingredients:

For the Soup:

  • 1.5 L chicken or vegetable broth
  • 2 carrots, sliced
  • 1 parsley root or parsnip, sliced (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped

For the Semolina Dumplings:

  • 1 egg
  • 4 tbsp semolina
  • Pinch of salt
  • 1 tbsp vegetable oil or melted butter

Instructions:

  1. Bring the broth to a gentle boil.
  2. Add the carrots and parsley root (if using). Cook until tender, about 15–20 minutes.
  3. Meanwhile, prepare the dumplings by mixing the egg, semolina, salt, and oil or melted butter. Let the mixture rest for 10 minutes.
  4. Using a teaspoon, scoop small portions of the mixture and gently drop them into the simmering soup.
  5. Cook for 10–15 minutes, until the dumplings are light and fluffy.
  6. Season the soup with salt and pepper to taste.
  7. Sprinkle with fresh parsley before serving.
