- Cook the Beans:
In a large pot, bring water or broth to a boil. Add the yellow beans and cook until tender (about 15–20 minutes). Add a pinch of salt. - Make the Roux (Rántás):
In a small pan, heat oil or butter. Add chopped onion and cook until soft. Stir in flour and cook gently until golden. Add paprika and garlic, stir quickly (don’t burn), then add a ladle of hot soup liquid to loosen it. - Add Roux to Soup:
Stir the roux into the pot with the beans. Let it simmer for a few minutes to thicken slightly. - Add Sour Cream & Dill:
In a bowl, mix sour cream with a ladle of hot soup to temper it, then stir it into the pot. Add chopped fresh dill. - Adjust Taste:
Add vinegar or lemon juice to brighten the flavor, and season with salt and pepper to taste.
🍽️ Serve with:
- Crusty bread
- A boiled potato side
- A hard-boiled egg or a soft poached egg on top (optional but traditional!)
