🍰 Hungarian Plum Cake (Szilvás Lepény)

👩‍🍳 Instructions:

1. Preheat & Prep:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13″ baking pan.

2. Cream Butter & Sugar:

  • Beat butter and sugar together until light and fluffy.
  • Add eggs one at a time, mixing well.
  • Stir in vanilla and sour cream until smooth.

3. Add Dry Ingredients:

  • In a separate bowl, whisk flour, baking powder, and salt.
  • Gradually add to the wet mixture and mix just until combined.

4. Assemble Cake:

  • Spread batter evenly into the pan.
  • Arrange plum halves cut-side up on top, pressing them gently into the batter.
  • Sprinkle the cinnamon-sugar mixture all over the top.

5. Bake:

  • Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
  • Cool slightly before slicing.

💡 Ashley’s Tip:

This cake is even better the next day—the plums soak into the sponge, making it extra moist and flavorful. Also pairs like a dream with a warm coffee or a scoop of vanilla ice cream!
