- In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla until smooth.
- Mix in the oats and cook for about 3–4 minutes, stirring constantly.
- Press half of the oat mixture firmly into the bottom of a greased 9×9-inch baking pan.
- In a microwave-safe bowl, melt the chocolate chips and peanut butter together until smooth (about 1–2 minutes, stirring every 30 seconds).
- Spread the chocolate-peanut butter mixture evenly over the oat base.
- Top with the remaining oat mixture and gently press down.
- Refrigerate for at least 2 hours before slicing into bars.
