
Instructions
- Cook the pasta
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
- Cook the shrimp
- Pat shrimp dry and season lightly with salt and pepper.
- In a large skillet, heat 2 tbsp butter and olive oil over medium-high heat.
- Add shrimp and cook 1โ2 minutes per side, until pink and just cooked through. Remove and set aside.
- Make the sauce
- In the same skillet, add remaining butter and garlic. Sautรฉ until fragrant (about 30 seconds).
- Pour in wine (or broth) and lemon juice, scraping up browned bits from the pan.
- Simmer for 2โ3 minutes until slightly reduced.
- Combine everything
- Add pasta to the skillet and toss in the sauce. Add a splash of reserved pasta water if needed for creaminess.
- Return shrimp to the pan. Toss well to coat.
- Stir in Parmesan and parsley. Adjust seasoning with salt, pepper, and optional chili flakes.
- Serve
- Plate up and serve immediately with extra Parmesan and lemon wedges.
