Instructions:
- Preheat oven to 350°F (175°C). Lightly grease or line a 9×13-inch baking dish with parchment paper.
- Make the batter:
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla (and almond extract, if using).
- Mix in flour and salt until a smooth dough forms.
- Assemble the bars:
- Spread about 2/3 of the dough evenly in the prepared baking dish.
- Spoon cherry pie filling over the top, spreading gently to cover.
- Drop remaining dough in spoonfuls over the filling — it doesn’t need to cover completely.
- Bake:
- Bake for 35–40 minutes, or until the top is lightly golden and a toothpick comes out clean from the crust.
- Cool & glaze:
- Let the bars cool completely.
- In a small bowl, whisk powdered sugar, milk, and extract to form a drizzle glaze. Drizzle over cooled bars.
- Slice & serve:
- Cut into squares and enjoy the sweet-tart cherry perfection!
💡 Tips:
- Swap in blueberry, peach, or apple pie filling for variations.
- These bars store well in the fridge and are even better the next day.
