Ingredients

Pastry Base:

  • 2 cups all-purpose flour
  • ½ cup butter, cold and cubed
  • 3 tbsp sugar
  • 1 egg
  • 2–3 tbsp cold water

Cream Filling:

  • 2 cups milk
  • ½ cup sugar
  • 3 tbsp cornstarch

  • ½ cup lemon juice (fresh)
  • 3–4 tbsp sugar
  • 1 egg
  • 1 tbsp cornstarch

Instructions

1️⃣ Make the pastry base:

  1. Preheat oven to 180°C (350°F).
  2. Mix flour, sugar, and butter until crumbly. Add egg and cold water to form dough.
  3. Press into a greased baking pan.
  4. Bake 15–20 minutes until lightly golden. Let cool.

2️⃣ Prepare the cream filling:

  1. Whisk egg yolks with sugar and cornstarch.
  2. Heat milk until warm, slowly whisk into yolk mixture.
  3. Return to heat, cook until thick, stirring constantly.
  4. Stir in vanilla, let slightly cool.
  5. Spread over baked pastry base.

3️⃣ Make lemon topping:

  1. Mix egg, lemon juice, sugar, and cornstarch.
  2. Cook over low heat until thick, stirring constantly.
  3. Pour over cream layer, smooth evenly.

4️⃣ Chill and serve:

  • Refrigerate at least 2–3 hours.
  • Cut into squares before serving.
