- 1 lb ground beef (or ground turkey)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 packet (or 2 tbsp) taco seasoning
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1 cup frozen or canned corn, drained
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese, divided
- 1 bag tortilla chips, lightly crushed (or you can use soft tortillas cut into pieces)
- Salt and black pepper, to taste
- Optional toppings: green onions, jalapeรฑos, diced tomatoes, avocado, or cilantro
