Ingredients
Dough:
- 2 ½ cups all-purpose flour
- 2 ¼ tsp (1 packet) instant yeast
- ½ cup warm milk
- ¼ cup sugar
- ¼ cup butter, melted
- 2 egg yolks
- Pinch of salt
- 1 tsp vanilla
Filling:
- 1 ½ cups ground poppy seeds
- ½ cup sugar or honey
- ½ cup milk
- ½ cup raisins
- ½ cup chopped nuts (walnuts/almonds)
- Zest of 1 lemon
- 1 tsp vanilla
- 1 egg white (for binding)
Finishing:
- 1 egg for brushing
- Powdered sugar (optional)
Instructions
1. Make the dough
- Mix warm milk + sugar + yeast; rest 5 min.
- Add flour, melted butter, egg yolks, salt, vanilla.
- Knead until smooth (8–10 min).
- Cover and rise 1 hour.
2. Make the filling
- Heat milk + sugar (or honey).
- Add ground poppy seeds → cook 2–3 minutes.
- Stir in raisins, nuts, lemon zest, vanilla.
- Cool completely.
- Mix in egg white.
3. Assemble
- Roll dough into a rectangle (about ¼ inch thick).
- Spread filling evenly, leaving edges clean.
- Roll tightly into a log.
- Seal edges well so it doesn’t burst.
4. Proof
Let the roll rest 20–30 minutes.
5. Bake
- Brush with beaten egg.
- Bake at 180°C / 350°F for 30–40 minutes,
until golden brown.
6. Finish
Cool completely.
Dust with powdered sugar or drizzle with icing.
