Ingredients

Dough:

  • 2 ½ cups all-purpose flour

  • 2 egg yolks
  • Pinch of salt
  • 1 tsp vanilla

Filling:

  • 1 ½ cups ground poppy seeds
  • ½ cup sugar or honey
  • ½ cup milk
  • ½ cup raisins
  • ½ cup chopped nuts (walnuts/almonds)
  • Zest of 1 lemon
  • 1 tsp vanilla
  • 1 egg white (for binding)

Finishing:

  • 1 egg for brushing
  • Powdered sugar (optional)

Instructions

1. Make the dough

  1. Mix warm milk + sugar + yeast; rest 5 min.
  2. Add flour, melted butter, egg yolks, salt, vanilla.
  3. Knead until smooth (8–10 min).
  4. Cover and rise 1 hour.

2. Make the filling

  1. Heat milk + sugar (or honey).
  2. Add ground poppy seeds → cook 2–3 minutes.
  3. Stir in raisins, nuts, lemon zest, vanilla.
  4. Cool completely.
  5. Mix in egg white.

3. Assemble

  1. Roll dough into a rectangle (about ¼ inch thick).
  2. Spread filling evenly, leaving edges clean.
  3. Roll tightly into a log.
  4. Seal edges well so it doesn’t burst.

4. Proof

Let the roll rest 20–30 minutes.


5. Bake

  1. Brush with beaten egg.
  2. Bake at 180°C / 350°F for 30–40 minutes,
    until golden brown.

6. Finish

Cool completely.
Dust with powdered sugar or drizzle with icing.
