🥄 Instructions

  1. Preheat the oven to 375°F (190°C).
    Lightly grease a 9×13-inch baking dish.
  2. Cook the vegetables:
    Heat olive oil in a large skillet over medium heat. Add the onion, peppers, and garlic. Sauté for 5–6 minutes until softened and fragrant.
  3. Mix the filling:
    In a large bowl, combine the cooked brown rice, sautéed veggies, black beans, corn, diced tomatoes, green chiles, and all the spices (cumin, chili powder, smoked paprika, salt, and pepper). Stir everything until well combined.
  4. Layer and bake:
    Spread half the mixture into the prepared baking dish. Sprinkle with half of the cheese.
    Add the remaining rice mixture and top with the rest of the cheese.
  5. Bake uncovered for about 20–25 minutes, or until the cheese is melted, bubbly, and golden.
  6. Garnish and serve:
    Sprinkle with fresh cilantro if you like, and serve hot with sour cream, avocado slices, or a dash of hot sauce!
