Step 1: Sauté the Base
- In a large heavy pot, heat the lard or oil over medium heat.
- Add the chopped onions and sauté gently until translucent and soft (about 5–7 minutes). Do not brown them.
- Remove the pot from the heat for a moment (this prevents the paprika from burning and becoming bitter).
- Stir in the sweet paprika until the onions are beautifully coated and reddish.
Step 2: Build the Stew
- Immediately add the potato chunks and stir well to coat them with the paprika-onion mixture.
- Add the diced tomato and chopped green pepper.
- Season with salt, pepper, and add the bay leaf if using.
- Pour in enough water or broth to just barely cover the potatoes.
Step 3: Simmer to Perfection
- Bring the mixture to a gentle boil, then reduce the heat to low.
- Cover and simmer until the potatoes are tender but not falling apart — about 25–30 minutes.
- After about 15 minutes of simmering, add the sliced sausage so it flavors the broth without becoming mushy.
Step 4: Serve
- Adjust seasoning if needed.
- Remove the bay leaf if used.
- Serve hot, with fresh bread to soak up all that rich, paprika-infused sauce!
