Step 2: Build the Stew

  1. Immediately add the potato chunks and stir well to coat them with the paprika-onion mixture.
  2. Add the diced tomato and chopped green pepper.
  3. Season with salt, pepper, and add the bay leaf if using.
  4. Pour in enough water or broth to just barely cover the potatoes.

Step 3: Simmer to Perfection

  1. Bring the mixture to a gentle boil, then reduce the heat to low.
  2. Cover and simmer until the potatoes are tender but not falling apart — about 25–30 minutes.
  3. After about 15 minutes of simmering, add the sliced sausage so it flavors the broth without becoming mushy.

Step 4: Serve

  • Adjust seasoning if needed.
  • Remove the bay leaf if used.
  • Serve hot, with fresh bread to soak up all that rich, paprika-infused sauce!
