
🇭🇺 Traditional Hungarian Kürtőskalács (Chimney Cake) Recipe 🥖🔥
Kürtőskalács, or chimney cake, is a crispy, caramelized pastry with a soft, fluffy inside, traditionally baked over an open fire. It’s coated in sugar, cinnamon, cocoa, or nuts and is a favorite at Hungarian fairs and bakeries like Édes Mackó!
🛒 Ingredients (Makes 4-5 chimney cakes)
For the Dough:
✔ 500 g (4 cups) all-purpose flour 🌾
✔ 7 g (2 ¼ tsp) instant yeast 🍞
✔ 200 ml (¾ cup) warm milk 🥛
✔ 50 g (¼ cup) sugar 🍯
✔ 1 egg 🥚
✔ 50 g (¼ cup) melted butter 🧈
✔ 1 pinch of salt 🧂
For the Coating:
✔ 100 g (½ cup) sugar 🍬
✔ 1 tsp cinnamon (optional) 🌿
✔ Chopped nuts, cocoa, or coconut (optional) 🥥🍫
👩🍳 Instructions
1️⃣ Make the Dough
- In a bowl, mix warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
- Add flour, egg, salt, and melted butter, kneading until smooth.
- Cover and let rise for 1 hour, or until doubled in size.
2️⃣ Shape the Chimney Cakes
- Preheat oven to 200°C (400°F).
- Grease metal baking tubes (or use foil-covered rolling pins).
- Roll dough into long strips (about 1-inch wide).
- Wrap the dough spirally around the tube, slightly overlapping each layer.
3️⃣ Coat & Bake
- Brush with melted butter, then roll in sugar and cinnamon.
- Place on a wire rack or stand them upright.
- Bake for 12-15 minutes, turning occasionally for even caramelization.
