Hungarian Pepper–Tomato Stew
Ingredients
- 2 tbsp lard or oil
- 1 large onion, sliced
- 2 tbsp sweet Hungarian paprika
- 5–6 Hungarian wax peppers or bell peppers, sliced
- 3–4 ripe tomatoes, chopped (or 1 can crushed tomatoes)
- Salt, to taste
- Black pepper (optional)

- Sliced Hungarian sausage (kolbász)
- Eggs (stirred in at the end)
- Rice or bread for serving
Instructions
- Heat lard or oil in a pot over medium heat.
- Add onion and sauté until soft and lightly golden.
- Remove from heat briefly, stir in paprika (prevents bitterness).
- Add sliced peppers and return to heat.
- Cook until peppers begin to soften.
- Add tomatoes, salt, and pepper.
- Simmer uncovered 20–30 minutes until thick and glossy.
