Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ÂĽ tsp salt
- 3 large eggs
- ½ cup vegetable oil (or melted butter)
- ½ cup milk
- 1 tsp vanilla extract
- 2 cups sour cherries (fresh or jarred, well drained)
- Powdered sugar for dusting
Directions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Whisk flour, baking powder, baking soda, and salt together.
- In another bowl, beat eggs and sugar until light and fluffy.
- Add oil, milk, and vanilla. Mix well.
- Gradually combine with dry ingredients until smooth.
- Pour batter into pan and spread evenly.
- Scatter sour cherries over the top and gently press them in.
- Bake 35–40 minutes, until a toothpick comes out clean.
- Cool, dust with powdered sugar, slice, and serve.
