🇭🇺 Hungarian Paprika Potatoes (Paprikás Krumpli)

Instructions

  1. Sauté base
    • Heat lard/oil in a large pot. Add onions and cook until soft and golden.
    • Remove from heat briefly, stir in paprika (so it doesn’t burn).
  2. Add potatoes & veggies
    • Add potatoes, garlic, bell pepper, and tomatoes. Stir to coat in paprika and onions.
  3. Simmer
    • Pour in water/broth just enough to cover the potatoes.
    • Season with salt and pepper. Bring to a boil, then reduce to a simmer.
  4. Add sausage
    • Stir in sliced kolbász.
    • Cover and simmer 30–40 minutes, until potatoes are tender and stew is thickened.
  5. Serve
    • Traditionally served with crusty bread and pickles. 🥒🥖

Tips & Variations:

  • For a richer flavor, some add a spoonful of tomato paste.
  • If you want it vegetarian, skip the sausage and use vegetable broth.
  • A dollop of sour cream on top is also delicious. 😋
