🇭🇺 Hungarian Mushroom Soup

🛒 Ingredients

  • 1 lb (450g) fresh mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 tbsp butter or oil
  • 1½ tbsp Hungarian sweet paprika
  • 1 tbsp flour
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • ½ cup sour cream
  • 1 tbsp soy sauce
  • 1 tsp dried dill (optional)
  • 1 tsp lemon juice
  • Salt & black pepper to taste
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

  1. Sauté
    • In a large pot, melt butter.
    • Add onion and cook until soft.
    • Add mushrooms and cook 5–7 minutes until tender.
  2. Season
    • Stir in paprika and flour.
    • Cook 1 minute (do not burn paprika).
  3. Simmer
    • Add broth, milk, soy sauce, and dill.
    • Simmer gently for 10–15 minutes.
  4. Finish
    • Reduce heat. Stir in sour cream and lemon juice.
    • Season with salt and pepper.
  5. Serve
    • Garnish with fresh parsley.
    • Serve hot with crusty bread.
