- Prepare the dough:
In a bowl, mix flour, sugar, baking powder, and salt. Add cold butter and rub it into the mixture until crumbly. - Add wet ingredients:
Mix in the egg, vanilla extract, and lemon zest. Knead into a soft dough. - Divide & chill:
Split the dough into two portions (one slightly larger). Wrap and place in the freezer for about 30–40 minutes. - Preheat oven:
Heat oven to 180°C (350°F). - Form the base:
Take the larger piece of dough and grate it evenly into a greased or lined baking pan. Press it lightly to form a base. - Add jam layer:
Spread the jam evenly over the base. - Top layer:
Grate the remaining dough over the jam, covering it like crumbs. - Bake:
Bake for 30–35 minutes until golden brown. - Cool & serve:
Let it cool completely before cutting into squares.
