  1. Sauté the Onions:
    In a large pot, heat the lard or oil over medium heat. Add chopped onions and cook until golden and soft.
  2. Add Garlic and Paprika:
    Remove the pot briefly from heat, stir in the minced garlic and sweet paprika (this prevents bitterness), then return to heat.
  3. Brown the Beef:
    Add beef cubes and stir to coat in the paprika. Cook for 5–10 minutes until the meat starts to brown.
  4. Add Veggies:
    Stir in carrots, parsnip, celeriac, tomato, bell pepper, and tomato paste if using. Season with salt, pepper, and caraway seeds.
  5. Simmer:
    Pour in the broth or water to fully cover the ingredients. Bring to a boil, then reduce heat and simmer for 45–60 minutes, or until meat is tender.
  6. Add Potatoes:
    Add diced potatoes and cook for another 15–20 minutes, until soft.

🍽️ Serve With:

  • Crusty bread or Hungarian csipetke (pinched noodles).
  • Optional garnish: chopped parsley or a spoon of sour cream.
