Derelye is a traditional Hungarian filled pasta, often stuffed with sweet cottage cheese, fruit jam, or even savory fillings. Think of it as Hungary’s version of sweet ravioli — soft pasta pillows tossed in buttery breadcrumbs and dusted with powdered sugar.

Dough

  • 2 cups (250 g) all-purpose flour
  • 2 large eggs
  • Pinch of salt
  • 2–3 tbsp water (if needed)

Sweet Cheese Filling

  • 1 cup (250 g) farmer’s cheese or dry cottage cheese
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tbsp sour cream
  • Zest of ½ lemon (optional)

For Coating

  • ½ cup breadcrumbs
  • 3 tbsp butter
  • Powdered sugar for serving

1️⃣ Make the Dough

  • Mix flour and salt.
  • Add eggs and knead into a smooth dough (add a little water if needed).
  • Cover and rest 20–30 minutes.

2️⃣ Prepare the Filling

  • Mix cheese, sugar, vanilla, sour cream, and lemon zest until smooth.

3️⃣ Assemble

  • Roll dough thin (about 1/16 inch).
  • Place small spoonfuls of filling spaced apart.
  • Fold dough over filling.
  • Press edges firmly to seal.
  • Cut into squares or rectangles.

4️⃣ Cook

  • Boil in salted water for 3–4 minutes, until they float.
  • Remove with slotted spoon.

5️⃣ Breadcrumb Coating

  • Melt butter in a pan.
  • Add breadcrumbs and toast until golden.
  • Toss cooked derelye in breadcrumbs.
