
(Hungarian Sweet Cheese Dumplings)
Derelye is a traditional Hungarian filled pasta, often stuffed with sweet cottage cheese, fruit jam, or even savory fillings. Think of it as Hungary’s version of sweet ravioli — soft pasta pillows tossed in buttery breadcrumbs and dusted with powdered sugar.
📝 Ingredients
Dough
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- Pinch of salt
- 2–3 tbsp water (if needed)
Sweet Cheese Filling
- 1 cup (250 g) farmer’s cheese or dry cottage cheese
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 tbsp sour cream
- Zest of ½ lemon (optional)
For Coating
- ½ cup breadcrumbs
- 3 tbsp butter
- Powdered sugar for serving
👩🍳 Instructions
1️⃣ Make the Dough
- Mix flour and salt.
- Add eggs and knead into a smooth dough (add a little water if needed).
- Cover and rest 20–30 minutes.
2️⃣ Prepare the Filling
- Mix cheese, sugar, vanilla, sour cream, and lemon zest until smooth.
3️⃣ Assemble
- Roll dough thin (about 1/16 inch).
- Place small spoonfuls of filling spaced apart.
- Fold dough over filling.
- Press edges firmly to seal.
- Cut into squares or rectangles.
4️⃣ Cook
- Boil in salted water for 3–4 minutes, until they float.
- Remove with slotted spoon.
5️⃣ Breadcrumb Coating
- Melt butter in a pan.
- Add breadcrumbs and toast until golden.
- Toss cooked derelye in breadcrumbs.
🍽️ Serve
Sprinkle generously with powdered sugar and serve warm.
