1. Prepare the dumpling dough
- In a bowl, mix mashed potatoes, egg, salt, and flour.
- Knead into a soft dough (add more flour if sticky).
- Set aside.
2. Start the soup
- Heat oil or butter in a pot.
- Sauté onion until soft.
- Add garlic and paprika, stir quickly (do not burn).
3. Add broth
- Pour in the broth.
- Season with salt and pepper.
- Bring to a gentle boil.
4. Add dumplings
- Tear or spoon small pieces of dough into the soup.
- Cook for about 5–7 minutes until dumplings float.
5. Add eggs
- Beat the eggs lightly.
- Slowly pour into the soup while stirring gently to create ribbons.
6. Serve
- Garnish with fresh parsley and serve hot.
