🇭🇺 Chicken Paprikash (Csirkepaprikás)

Ingredients

  • 2 lbs (900 g) bone-in chicken thighs or drumsticks
  • 2 tablespoons oil or lard
  • 1 large onion, finely chopped
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 green pepper, chopped (optional)
  • 1 tomato, chopped (optional)
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tablespoon flour

Directions

  1. Heat oil in a large pot. Sauté onion until soft and lightly golden.
  2. Remove from heat and stir in paprika (to prevent burning).
  3. Add chicken pieces and coat well. Return to heat.
  4. Add salt, pepper, green pepper, tomato, and broth. Cover and simmer 35–45 minutes until chicken is tender.
  5. In a small bowl, mix sour cream and flour. Stir in a few spoonfuls of hot sauce to temper.
  6. Slowly add sour cream mixture back to the pot. Simmer gently 3–5 minutes (do not boil).
  7. Serve hot with nokedli (Hungarian dumplings) or egg noodles.
