🇭🇺🇭🇺 Hungarian Cheese Biscuits (Pogácsa)

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp instant yeast
  • ½ cup warm milk
  • ½ cup sour cream
  • ½ cup butter, softened
  • 1 egg
  • 1 ½ cups grated cheese (such as semi-hard cheese)
  • 1 egg yolk (for brushing)

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes if using active yeast.
  2. In a large bowl, mix flour and salt. Add butter and rub into flour until crumbly.
  3. Stir in sour cream, egg, yeast mixture, and 1 cup of grated cheese. Mix to form a soft dough.
  4. Knead briefly until smooth. Cover and let rise 45–60 minutes.
  5. Roll dough to about ¾ inch thick. Score the top in a crisscross pattern.
  6. Cut into small rounds. Place on a baking sheet.
  7. Brush with egg yolk and sprinkle remaining cheese on top.
  8. Bake at 375°F (190°C) for 15–20 minutes until golden.
