1. Make the mashed potatoes
- Boil potatoes until soft (12–15 min).
- Drain, mash with butter, milk, salt, and pepper.
- Stir in cheddar if using.
- Set aside.
2. Make the meat filling
- In a large skillet, cook ground beef/lamb until browned.
- Add onions + garlic and cook until soft.
- Stir in carrots, tomato paste, Worcestershire, thyme, paprika, salt, and pepper.
- Pour in beef broth and simmer 5–7 minutes until thickened.
- Add peas (no need to cook long — they soften fast).
3. Assemble
- Preheat oven to 400°F (200°C).
- Spread the meat mixture in a baking dish.
- Top evenly with mashed potatoes.
- Use a fork to create little peaks (they crisp beautifully).
4. Bake
- Bake 20–25 minutes, or until golden on top.
- Broil the last 2 minutes for extra browning if you like.
