
🥣 Instructions
1. Prepare the Base
- In a bowl, whisk egg yolks + sugar until pale.
- Add flour, then warm milk, whisking until smooth.
- Add vanilla + melted butter. Mix well.
2. Whip the Egg Whites
- In a clean bowl, beat egg whites + pinch of salt until stiff peaks form.
- Fold gently into the yolk mixture — DO NOT overmix.
3. Fill the Cups
- Grease ramekins or cupcake molds with butter and dust with sugar.
- Fill them almost to the top.
4. Bake
- Preheat oven to 375°F (190°C).
- Bake 12–15 minutes until puffed, tall, and golden.
- Don’t open the oven while baking!
5. Serve Immediately
Soufflés start to deflate after a few minutes — serve right away!
Dust with powdered sugar or drizzle with a little honey.
