🥣 Instructions

1. Prepare the Base

  1. In a bowl, whisk egg yolks + sugar until pale.
  2. Add flour, then warm milk, whisking until smooth.
  3. Add vanilla + melted butter. Mix well.

2. Whip the Egg Whites

  1. In a clean bowl, beat egg whites + pinch of salt until stiff peaks form.
  2. Fold gently into the yolk mixture — DO NOT overmix.

3. Fill the Cups

  • Grease ramekins or cupcake molds with butter and dust with sugar.
  • Fill them almost to the top.

4. Bake

  • Preheat oven to 375°F (190°C).
  • Bake 12–15 minutes until puffed, tall, and golden.
  • Don’t open the oven while baking!

5. Serve Immediately
